Additionally, Sommelier recommends and serves wine to guests. May require an associate degree or equivalent. May possess or be working towards certification. Typically reports to a head of a unit/department. The Sommelier works independently within established procedures associated with the specific job function.     Aethos Corsica is located in Haute-Corse, in a 17th-century palace near Saint Florent and was recently completely restored to its former glory. The palace sits atop the spectacular village of Oletta, one of the most beautiful villages in Corsica, with views sweeping across the entire northern bay of Saint-Florent and its beaches.

    Job Overview

    U Palazzu restaurant is looking for a unique waiter/waitress to join our team. The most successful candidate will have a genuine passion and be motivated by the opportunity of a summer season in a luxury Boutique-hotel! This is a truly unique opportunity for the right candidate.

    Reporting to Management, and working with the Chef, you will be in charge of all evening service for our 24-seat restaurant. Occasional runner/bartender support as needed.

    At the start of the season, you will draw up a coherent wine list in close collaboration with the Chef and Management, and you will be able to adapt this list as the season progresses, with perfect stock management.

    You are a good administrator: you will be responsible for ordering wine and beverages from our suppliers.

    You'll take a monthly inventory of the bar.

    Your daily tasks:

    • Late-afternoon "aperitif" service for our customers in the establishment's gardens
    • Room set-up, service, clearing, bar washing-up and end-of-service cleaning
    • Take care of our customers with personalized, quality service, according to the codes of a 4/5 star hotel restaurant, for our hotel and external customers
    • Checking in and out
    • Closing the bar/restaurant area and closing the daily cash register in collaboration with existing reception staff


    Profile Required

    At least 2 years' experience in a position of responsibility in a gastronomic, semi-gastronomic and/or 4 or 5* hotel restaurant.

    Excellent knowledge of our regional wines and other French classics is essential.
