    In our scratch kitchen, the Pastry Cook is a key player in ensuring we are serving the best quality food to our guests. The Pastry Cooks responsibilities include preparing quality pastry items such as brunch items, desserts, breads, ice creams, sorbets, creams, simple syrups, amenities, displays/centerpieces and special request items. In addition, they are also responsible for supporting the daily preparation of food items and station management. Those duties include set-up, stocking and preparing food in accordance to Vines recipes and standards, ensuring cleanliness, proper safety procedures, and organizing kitchen, walk-in coolers and storage areas. Teamwork is essential and is what we’re all about at Vines!

     

    General Accountabilities

    • Consulting with the executive chef and other chefs to plan menus
    • Executing pastry orders for catered events and accommodating special requests
    • Ensures food is stored and cooked at correct temperature by regulating temperature of ovens, broilers, grills, and roasters.
    • Ensures freshness of food and ingredients by checking for quality, keeping track of old and new items, and rotating stock.
    • Prepares food according to recipes, while using sound personal judgment and experience.
    • Demonstrating skill in baking pastries, desserts, cakes, cookies, sweets, and pies
    • Creating enticing confectionery decorations and delicious pastry fillings, as well as keeping abreast of new pastry baking techniques
    • Applying classic pastry baking techniques when preparing traditional pastries
    • Adding novel, creative, and delicious pastry items to the existing selection
    • Inspects and clean food preparation areas or serving areas to ensure safe and sanitary food-handling practices.
    • Supports team in the Baking, roasting, broiling, and steaming of meats, fish, vegetables, and other foods.
    • Observes and tests foods to determine if they have been cooked sufficiently.
    • Washes, peels, cuts, and seeds fruits and vegetables to prepare them for consumption.
    • Consults with supervisory staff to plan menus, taking into consideration factors such as costs and special event needs.

    Job Qualifications

    • Must represent Vines Mission, Vision and Values
    • Must be at least 18 years old
    • A minimum of 3-years experience in upscale dining or an equivalent kitchen environment required
    • A passion for baking, creating and curating gorgeous, delicious desserts!
    • Hard-working and a team player
    • Expert knowledge of traditional pastry baking techniques
    • Creative ability in designing, decorating, and filling confectionery
    • Basic knowledge of professional cooking and experience in knife handling
    • Knowledge of safety, sanitation and food handling procedures
    • Must stock and maintain designated food station(s)
    • Ability to work calmly and effectively under pressure
    • Ability to work flexible shifts and schedules, inclusive of weekends and holidays
    • Ability to communicate clearly with managers and team members

    Physical Demands 

    • Ability to stand and walk for up to 10 hours per day

    • Ability to work within the following conditions: wet floors, temperature extremes, and loud noise
    • Ability to perform essential functions to Vines Grille and Wine Bar standards and with reasonable accommodation
