    Prairie Flower Casino is searching for an experienced Director of Food and Beverage with a strong history of ground up restaurant openings. Food and beverage experience within the casino industry is highly preferred. Come join a our incredible team!

    Summary

    The Director of Food & Beverage (F&B) is responsible for the overall operation and success of all Food &Beverage functions including restaurant outlets, lounges, and casino beverage teams.

    Essential Duties And Responsibilities

    • Must demonstrate leadership ability with all levels of staffing.
    • Develops F&B programs which improve guest service, revenue, and net profits. Assists in the design and oversees the implementation of menus and recipe creation in line with overall F&B concepts.
    • Participates in setting marketing policies and goals designed to attract and maintain loyal guests.
    • Coaches and guides department Leadership and Team Members to meet department goals and maintain a high level of guest service and internal service standards. Motivates Team Members for continuous improvement.
    • Manages and controls F&B budgets to ensure efficiency and effectiveness while staying within budgetary requirements.
    • Ensures labor costs are appropriately managed and works with Human Resources regarding staffing needs. Interviews, selects, and ensures appropriate training is maintained throughout the department.
    • Maintains a high level of confidentiality and professionalism.
    • Sets standards to ensure a high level of maintenance and cleanliness standards within all F&B areas.
    • Ability to respond to common inquiries or complaints from customers, regulatory agencies, or members of the business community. Resolves Guest complaints in a timely and positive manner.
    • Creates Standard Operating Procedures and ensures adherence to these standards.
    • Maintains accurate and timely performance management documentation including both corrective and positive feedback for director reports. Ensures department leaders are trained, coached and accountable for providing timely written and verbal feedback to team. Ensures timely administration of Team Member evaluations.
    • Negotiates with and selects vendors for procurement of F&B products. Ensures a high level of quality, selection, and variety while ensuring value and cost are appropriate. Ensures ordering is done efficiently and effectively by F&B staff.
    • Responsible for the accuracy and thoroughness of departmental records and reports.
    • Must be able to work the required work schedule, which may include nights, weekends, and holidays. Works physically onsite to manage business and interact personally with Team Members, vendors, and guests.
    • Ensures all safety standards are met and possible safety hazards are quickly resolved.
    • Outstanding example of and a credit to Prairie Flower Casino.

    Required Skills, Knowledge And Abilities

    • Minimum of 5 to 10 years of front and back of house F&B experience. Casino industry experience is a plus.
    • Bachelor’s degree in Hotel/Restaurant management, Culinary or related area preferred. A combination of education and experience will be considered.
    • Excellent Guest Service and interpersonal skills required.
    • Strong knowledge and experience with a broad range of F&B quality and price points. Knowledge of liquor, beer, and wine product pricing and sales is required.
    • Must be able to read, write, speak, and understand English. Bilingual skills a plus.
    • Excellent written and oral communication skills required. Ability to interact and communicate in both group and individual settings. Must be able to collaborate with all levels of the organization on projects and daily needs.
    • Must be able to effectively use Microsoft Office Suite and POS systems.
    • Strong organization and analytical skills required.
    • Ability to read, analyze, and act upon complex documents and reports necessary.
    • Ability to add, subtract, multiply and divide in units of measure, using whole numbers, common fractions, and decimals.
    • Ability to define problems collects data, establish facts, and draw valid conclusions.
    • Must be able to maintain appropriate Gaming License.
    • Must have and maintain a valid driver's license with a safe driving record.
