General Summary of Job Duties: The Assistant Executive Steward will be responsible for supporting the Executive Steward and ensuring that all food service areas are properly cleaned and sanitized. The role requires a strong work ethic, attention to detail, and the ability to work in a team environment.
Principle Responsibilities And Duties
- Ensures that Silverton Casino and Southern Nevada Health District regulations are complied with.
- Completes all assigned duties in accordance with Silverton Casino and Southern Nevada Health District regulations, as well as within a period.
- Must understand and adhere to the safe handling, use, and storage of all chemicals employed during the job duties.
- Knowledge of applicable Company and departmental policies and procedures, as well as the willingness to learn and follow any policy or procedure that may be introduced in the future.
- Ability to understand and adhere to all safety regulations and regulations.
- Schedule and supervise regular training within the department.
- Identifies and notifies Executive Steward and/or Executive Chef of any unsafe conditions or areas, machinery that require attention or repair when as well as when materials and chemicals require restocking. Submit work orders as needed.
- Assigns daily duties to Shift Stewards, kitchen cleaners and heavy-duty kitchen cleaners.
- Conducts pre-shift meetings with staff. Maintains an open line of communication.
- Making schedule adjustments regarding business needs.
- Proper chemical handling by all Team Members in accordance with Southern Nevada Health District, Food Safety Standards and OSHA
- Granting early-outs or emergency overtime if needed with justification, in writing to Chefs department (for OT only)
- Assist the Executive Steward when requested to recruit, hire, train, develop, retain, supervise, appraise, discipline/counsel, and schedule Team Members to ensure successful outlet operation.
- Ensure that all subordinate Shift Stewards, Kitchen and Heavy-Duty Cleaners and TDR Attendants, and the documentation of Team Member conference reports and Silverton Standard Operating Procedures are included.
- Maintain records and logs as needed, including attendance logs, checklists, and any other mandated forms.
- Inventory of China, Glass, and Silver in all food outlets. Adjusting pars when needed.
- Communicate daily with the management team to ensure any questions are answered or concerns addressed. Ensure that all subordinates are following their job description and Standard Operating Procedures.
- Maintain all equipment in a clean and neat environment, including the chemical room and use all chemicals according to use, and know where MSDS sheets are located.
- Ability to initiate orders, work orders, and timekeeping.
- Organization and inventory of storage spaces.

Skills, Education & Other Requirements
- Basic computer skills including working knowledge of Word, Excel, Lotus Notes and Hot Sos, Stratton Warren and TMx.
- Annually updated driving record.
