Executive Chef directs and oversees kitchen operations, including menu development, purchasing, inventory, cost control and sanitation. Creates and updates menus that will appeal to customers, utilize seasonal ingredients, and maximize profits. Being an Executive Chef develops and tests new recipes. Solicits and studies customer feedback to maintain high standards of quality and satisfaction. Additionally, Executive Chef troubleshoots and resolves operational issues. Complies with all safety and food sanitation laws and regulations. Supervises, trains, and mentors staff. Typically requires a bachelor's degree in culinary arts or equivalent. Typically reports to top management. The Executive Chef typically manages through subordinate managers and professionals in larger groups of moderate complexity. Provides input to strategic decisions that affect the functional area of responsibility. May give input into developing the budget. To be an Executive Chef typically requires 3+ years of managerial experience. Capable of resolving escalated issues arising from operations and requiring coordination with other departments. The selected candidate will lead culinary operations for a high volume residential dining hall on campus.

    Key Responsibilities:

    Leadership and Training: Lead and mentor a team of chefs, cooks, and culinary professionals, providing guidance on food preparation, presentation, safety, and sanitation practices.

    Culinary Excellence: Set and uphold culinary standards, ensuring compliance with recipes, food quality, and presentation standards that exceed expectations.

    Menu Development: Collaborate with stakeholders to develop and execute innovative menus and concepts that tantalize the taste buds and delight the senses.

    Inventory Management: Maintain optimal inventory levels of food and supplies, adhering to budgetary guidelines while ensuring seamless operations and product availability.

    Compliance and Safety: Ensure compliance with federal, state, and local health and sanitation regulations, fostering a safe and hygienic culinary environment.

    Financial Oversight: Forecast annual food and labor costs, monitoring financial performance to drive efficiency and profitability.

    Professional Development: Engage in ongoing professional development opportunities, attending meetings, staff development sessions, and industry programs to stay ahead of culinary trends and best practices.

    Adaptable Support: Embrace flexibility and adaptability, taking on additional duties as needed to ensure the success of our culinary operations.


    Preferred Qualifications:

    A.S. or equivalent experience

    Three to five years of progressive culinary/kitchen management experience

    Comprehensive knowledge of food and catering trends with a focus on quality, production, sanitation, food cost controls, and presentation

    Experienced with computers; to include Microsoft Office (Word, Excel and Power Point), Outlook, E-mail and the Internet

    Extensive catering experience a plus

    High volume, complex foodservice operations experience - highly desirable

    ServSafe certified - highly desirable
