    Dozen Bakery was opened in 2015 in the Wedgewood-Houston neighborhood of Nashville. Over the past 9 years, we've become a staple of Nashville. Our bread was even named Best Bread in Tennessee by Food & Wine! As we look toward our future growth, we are seeking a leader with sourdough bread knowledge and experience to lead our team and further develop our bread program.

    We’re looking to add a bread program manager to our team. Prior professional bread baking experience is required. Interested, but live out of state? We will consider a relocation stipend for the right candidate to move to Nashville. This is a full-time position, with 30-40 hours scheduled weekly. This position requires early morning shifts (4am-12:30pm) weekly. At least one weekend shift per week is required.

    This position requires constant standing, frequent walking and bending, and the ability to lift and/or carry up to 50 pounds without assistance. Basic math skills are required.

    JOB DESCRIPTION

    The Bread Team Manager is in charge of the day-to-day operations of the bread department, ensuring production goals are met and the quality of all bread meets company standards. The responsibilities of this role include, but aren’t limited to:

    PLANNING AND PRODUCTION

    • Effectively communicates production information to the bread team.
    • Plans daily production based on shop and wholesale needs.
    • Ensures that the department is adequately staffed in order to meet production goals.
    • Spearheads all seasonal menu changes, delegating new item development as necessary.
    • Ensures that the bread team has all the ingredients, materials, and resources they need to successfully do their jobs.

    QUALITY

    • Analyzes results (quality, efficiency, timeliness) with managers and employees in order to make improvements in overall team performance.
    • Knows and recognizes the correct appearance of each bread type; trains and coaches the bread team to consistently mix, shape, and bake for correct and uniform color and appearance.
    • Consistently provides positive as well as constructive feedback to team members on the quality of items produced.

    TEAM

    • Creates weekly schedule for bread team, ensuring adequate coverage each day for department needs.
    • Continuously coaches and trains the bread team on the standards, practices, and culture of Dozen Bakery.
    • Maintains a working knowledge of all Dozen products in order to inform and educate customers and staff.
    • Serves as the main trainer for the department, training new employees on all aspects of the bread department including scaling, mixing, shaping, and baking. Delegates training to other senior team members as needed.
    • Conducts monthly meetings for the bread team to provide new information, address any issues, and recognize the hard work of each person in their department.
    • Ensures all team members are following food safety practices at all times.
    • Participates in weekly managers meetings in order to collaborate and share information with the owner and other managers.
    • Documents any performance or conduct issues of members of the bread team; creates a specific action plan to correct any documented issues.
    • Plans and teaches bread education classes for the front-of-house team in order to make sure they have the knowledge to educate our customers about our bread making process for each item.
    • Develops training and education documents for the front-of-house to keep on file for their reference.
