    Job Description 

    The Director of Food & Beverage is responsible for leading operations of multi outlet food and beverage services. Outlets include on/off premise catering, casual dining and outside bars. The position works cooperatively with the Executive Chef and directly leads, trains and develops front of the house leadership staff. 

    Essential Functions

    2. Meet and exceed guest expectations 
    3. Meet or exceed all revenue, COGS and labor targets  
    4. Hire, train and motivate team, prepared to hit each season in stride 
    5. Work with the marketing department and senior leadership to maximize revenue opportunities throughout all outlets 
    6. Develop and institute new food menus 
    7. Meet all deadlines for menu development, costing and implementation  
    8. Work in harmony with the banquet sales team to ensure we are most competitive in our market  
    9. Maximize the Avalon Brew Pub brewing output and brand labels  
    10. Maximize the benefits of all ICONA technology platforms  
    11. Analyze and monitor all granular metrics around menu profitability, sales leaders, COGS, Labor, waste and theft 
    12. Create and monitor the annual operating budget 
    13. Analyze and monitor profit and loss statements  
    14. Set clear performance metrics with all appropriate team members 
    15. Always extend professionalism and courtesy to team members 
    16. Lead by example demonstrating self-confidence, energy, and enthusiasm. 
    17. Provide associates with the necessary tools, training, and equipment they need to perform their job 
    18. Develop and execute all SOPs for existing and new food & beverage outlets 
    19. Circulate throughout outlets, courteously and warmly greeting guests and associates 
    20. Ensure service is prompt and courteous 
    21. Establish, direct, and review performance standards in food preparation, purchasing, production to ensure effective, controlled, and coordinated efforts are achieved 
    22. Monitor, direct, and coordinate effective sanitation, cleanliness, and organization effort in food & beverage operating areas 
    23. Ensure proper staffing procedures 
    24. Direct, review liquor procedures to ensure inventory turns and security 
    25. Be knowledgeable and comply with federal, state and local laws and regulations as it relates to food and liquor 
    26. Ensure food and beverage staff has all been trained in responsible alcohol service. 
    27. All guests must be treated in a manner to ensure their complete satisfaction.  Always strive to exceed guests’ expectations 
    28. Performs other duties as directed 
    29. Weekly attendance to Aloha Culture Meeting.

    Supervisory Responsibility 

    This position manages all employees of the department and is responsible for the performance management and hiring of the employees within that department.  

    Work Environment 

    Indoor and outdoor dining venues and commercial kitchen?environment.?The noise level in the work environment can be loud. The employee may be exposed to hazards including, but are not limited to, cuts, slipping, tripping, falls and burns. Frequent hand washing is required.? 

    Physical Demands 

    The physical demands described here are representative of those that must be met by an employee to successfully perform the essential functions of this job. 

    While performing the duties of this job, the employee is regularly required to talk and hear. This position is very active and requires standing, walking, bending, kneeling, stooping and crouching. The position may require lifting of products weighing up to 50 pounds.

    Position Type/Expected Hours of Work 

    This is a full-time position. This role requires forty, plus hours to include nights weekends and holidays. 

    Travel 

    No travel is expected for this position. 

    Required Education and Experience 

    1. High school diploma or equivalent. 
    2. 10 years in food & beverage/hospitality 
    3. 5 years Director of Food & Beverage experience 
    4. Aloha POS, Hot Schedules and Marketman experience preferred
