Additionally, Executive Steward may require a high school diploma or its equivalent. Typically reports to a supervisor or manager. The Executive Steward supervises a small group of para-professional staff in an organization characterized by highly transactional or repetitive processes. Contributes to the development of processes and procedures. To be an Executive Steward typically requires 3 years experience in the related area as an individual contributor. JOB OVERVIEW:
Provide direct and general supervision to effectively manage stewarding team in order to ensure the overall cleanliness and sanitation of all kitchen outlets while supporting Boyd Gaming’s vision, mission and values.
JOB RESPONSIBILITIES:
Deliver internal and external guest service the Boyd Gaming Way. Always exhibit a friendly and approachable demeanor. Be polite and courteous when speaking with guests and team members. Staff, schedule, evaluate, train, develop and monitor team members.
Recommend wage increases, promotions, demotions, discipline and other employment actions for team members.
Understand department objectives, standards, guidelines and budget to achieve effective supervision of department; adjust daily schedule according to business levels.
Develop, implement, and monitor department standards, guidelines, and objectives, and maintain other administrative processes such as budget and staffing to ensure proper planning and efficient operation of department.
Direct the maintenance of cleanliness of the back of the house areas, which include: main kitchen, storage areas, dumpster, loading dock, EDR, Concession and washing areas. Manage general cleaning schedule so that the food service areas meet or exceed the health inspection requirements.
Assist in the maintenance of the inventory and coordination of the distribution of all big four items: china, glassware, linens and silver which also includes visual inspection to ensure cleanliness and safe transportation.
Direct the inspection of all restaurant kitchen areas; make decisions for necessary corrective action in order to maintain company and health department standards.
Coordinate daily with the Executive Chef and Room Chefs concerning kitchen cleaning and cleaning projects, walk-in boxes, hoods, etc.,
Ensure dishes, pots, pans, flatware and other kitchen items and utensils are cleaned in an appropriate and timely manner.
Coordinate and direct work on assigned shift to ensure all restaurant areas, equipment and hoods are cleaned, sanitized and maintained in accordance with company and health department standards.
Coordinate and direct work to ensure the organization, sanitation, inventory and control of all cookware, china, glassware, and silverware items.
Ensure all dishwashing machinery is operated in accordance with manufacturers operating instructions and properly cleaned at the end of the day/shift and is serviced periodically.
Perform other duties as assigned by management.
JOB QUALIFICATIONS
· Ability to obtain and maintain valid gaming license
· Demonstrated knowledge of kitchen sanitation standards
· Experience with kitchen/dishwashing machinery
